How to Make a Spiced Apple and Lemongrass Drink

Apple and lemongrass make a versatile drink for an autumn afternoon. Compared with the Christmas version, this everyday recipe keeps the spice simple and can be served warm or chilled.

Ingredients: serves two

  • 300ml brewed lemongrass tea
  • 200ml apple juice
  • One small cinnamon stick
  • A squeeze of lemon, optional

Warm method

  1. Brew the tea according to its packet and remove the tea bag.
  2. Add the tea, juice and cinnamon stick to a saucepan.
  3. Warm gently for five minutes, then remove the cinnamon.
  4. Taste and add a little lemon if you like a sharper finish.
  5. Pour into heatproof mugs.

To serve it cold

Let the strained drink cool, then refrigerate promptly in a clean covered jug. Add ice just before serving. Use less juice and more tea if the result is too sweet for your preference.

Keep it simple

Do not leave the cinnamon steeping indefinitely: its flavour can dominate the lemongrass. This small-batch recipe is useful when you want a fruit-led drink without preparing a large punch bowl. It is a new serving idea inspired by the guide’s hot and cold tea suggestions.
